It uses konjac rice as a zero-carb alternative to regular rice, making it perfect for those on a low-carb or keto diet. The dish is colourful and flavourful, featuring a variety of vegetables and proteins.

Ingredients

  • 1 packet of konjac rice

  • 1 boneless chicken thigh (cubed and marinated with soy sauce, pepper & sesame oil)

  • ½ cup shrimps (cubed)

  • ½ cup diced yellow bell peppers

  • ½ cup diced green peppers

  • 1 tbsp minced garlic

  • 1 to 2 bird’s eye chilies (optional)

  • 3 egg yolks or 2 whole eggs

  • 1½ tbsp fish sauce

  • Salt and pepper to taste

  • Spring onions (chopped) for garnishing

Directions

  • Prepare konjac rice according to the instructions on the packaging.
  • In a pan, stir-fry the minced garlic until fragrant. Then add the chicken and shrimps. Stir-fry for a while, then add the chilies, bell peppers, and seasonings. Add konjac rice and mix evenly. Push the rice to one side of the pan, add the egg yolks, and scramble until almost dry. Then mix well with the rice. Adjust taste accordingly.
  • Garnish with chopped spring onions.
