Ingredients

  • For the Broth
  • Beef Bone (2 lb)

  • Large Onion (1)

  • Beef Bullion (7-8 blocks)

  • Green Onion (2 sticks)

  • Ginger (2-3 inches)

  • Himalayan Salt (1 tbsp)

  • Package Pho Spices (1)

  • Monkfruit Sweetener (1 tbsp)

  • Fish Sauce (1 tbsp)

  • For the Noodles and Toppings
  • Zero Carb Noodles or Konjac Noodles (1 package)

  • Bean Sprouts (1 cup)

  • Jalapeno (thin slices)

  • Thai Basil Leaves (4-5)

  • Chopped Green Onions (1 tbsp)

  • Beef Brisket (1½ lb)

  • Sriracha Sauce (1 tbsp)

  • Lime Juice (1 tbsp)

Directions

  • In a large pot, boil approximately 6 liters of water. Once boiled, add beef bones. (05:09-05:37)
  • On medium heat, pan-roast ginger and onion on a frying pan until brownish. (05:57-06:13)
  • Pan-roast all Pho’ spices until fragranced. (06:13-06:46)
  • Use a strainer to remove gunk from the pot. Insert the pan-roasted spices into the pouch provided with the Pho’ spices and tie/close them. (06:46-07:39)
  • Add the pouch, onion, ginger, beef bullion, and salt to the pot. Let it simmer on low heat for at least 4 hours. (07:39-08:36)
  • Add green onion to the pot. Cover and cook on medium heat for 10-20 minutes. (08:36-09:09)
  • Add monk fruit/sweetener and fish sauce. Cover and simmer for another 5-10 minutes. (09:09-09:38)
  • Slice the beef brisket as thin as possible, ensuring you slice against the grain. (09:38-10:28)
  • In a large bowl, place noodles and thin slices of beef. Pour boiling soup over the beef and noodles. Add fresh slices of jalapeno, bean sprouts, Thai basil leaves, and a dash of lime juice. For a spicier soup, add a tablespoon of Sriracha sauce. (10:28-11:05)
